왜 콩을 물에 오래 불려서 삶는거지? 为什么豆子泡得时间长? Why do you boil soybeans by soaking them in water for a long time?

 

요즘은 이제 햇 콩을 수확해서 어머님들이#메주를 만들어 달라고 많이 가져오시고 계시고, 저희도 만들어서 친척들께 보내드리려고 계속 메주를 만들고 있는데요..

잘 아시다시피 콩은 단백질 함량이 40%로 높고, 곡류에 많지 않은 #리신(Lysine)과 #트립토판(tryptophan) 함량이 높아서 곡류와 함께 섭취하면 부족한 영양분을 보충해 주어 매우 효과적입니다.

여름에는 콩을 5시간 정도 물에 불리면 익히기에 충분하게 불어나지만 날씨가 추워진 지금은 최소 8시간 정도는 불려줘야 합니다.

왜 콩을 물에 오래 불릴까요? 빨리 익히기 위해서이기도 하지만 콩에 들어있는 #탄닌, #사포닌, #시안화합물 등 불순물을 제거하는 것이 주된 목적입니다. 날 #콩으로 드시면 소화 안되고 배탈나는 성분에 위의 것들이 들어 있어서 물에 오랜 시간 불린다고 보시면 됩니다.

이렇게 불린 콩을 솥에다 쪄 냅니다. #감탕물을 얻기 위해서 이기도 하지만 콩의 단 맛이 감소되지 않게 하고 깊은 된장맛, 간장맛을 내기 위해서 입니다. 메주 형성을 하는데도 스팀에 찐 콩은 쉽게 부서지는 반면 솥에 찐 콩은 찰기가 많습니다.

콩을 10kg 물에 불려서 삶으면 약 20kg정도가 됩니다. 햇볕이 잘 드는 곳에서 잘 말리면 다시 원위치 된다고 보시면 됩니다.

메주를 발효시킬 때는 햇볕이 잘 드는 곳에 매달아 놓되, 메주끼리 부딪치지 않도록 해 주세요. 또한 바닥이 땅이나 장판 등에 닿지 않도록 해 주셔야 붉은 곰팡이가 생기는 것을 막을 수 있습니다.

把泡好的豆子蒸到锅里。 # 既是为了获得甜汤,又是为了不让豆子的甜味减少,同时为了散发出浓浓的大酱味和酱油味。 在酱曲形成过程中,蒸汽蒸的大豆容易碎裂,而锅里蒸的大豆黏性很大。

把大豆泡在水里煮一下,大概20公斤左右。 在阳光充足的地方晒干的话,可以看做是回到原位。

What if there is a fast food sold more than Big mac hamburgers?

  As you know, hamburger, a typical fast food originated from Hamburg steak made in Germany for the first time, has spread all over the world, and with coca-cola, it is regarded as a symbol of open civilization or open culture, and even now most young nice-looking men and women in many countries make it a point to eat hamburgers when they have dates.

1. At first, harvest laver in the sea water.
2. After drying it in the sunlight well, cut it into the same A4 sized sheets.
3. Spread perilla oil or sesame oil on both sides of a sheet of laver.
4. After spreading boiled rice on the laver, to the eater's liking, put crab meat, pickled radish, ham, carrots, eggs, spinach, and cucumber, etc. on it, and roll it.
5. Then slice the roll into the same sized slices, and it is 'gim+bab', a unique fast food which is only in Korea, and overcomes hamburgers.


Generally, gimbab is named after the main ingredients in it, so that there
are so many kinds of gimbab in Korea, and the common ones of them are kimchi-gimbab, chamchi-gimbab, ddaengcho-gimbab, sogogi-gimbab, yachae-gimbab, salad-gimbab, cheese-gimbab, gyeranmari-gimbab, sigeumchi-gimbab, and nude-gimbab even rolled inside out, and covered with rice, and so on. In addition to this, countless kinds of gimbab are an established fast food in most Korean fast food restaurants.

       The price of a roll of gimbab is only 1~3 US$, but generally two rolls of gimbab can be a nice meal. Gimbab was a very precious food in the past, so that we could eat it only the time we went on a picnic at school or an organization, or we had an important event.
